What each ingredient does
- Ground coffee
- Provides the flavor compounds that dissolve into the water during steeping.
- Boiling water
- Extracts flavor from the coffee grounds and dissolves them into the brew.
The step that matters
Letting it steep without boiling. Boiling the coffee while it steeps can over-extract bitter compounds and make the brew harsh. Keeping the water just below boiling extracts flavor more evenly and gives a smoother cup.
