Why it works: Potato and onion are a kitchen classic. They rank in the top 3% of all ingredient pairs, and cooks put them together in 9,023 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓
Green-corn Chowder
Ingredients
Directions
Fry the pork slices in a chowder kettle until browned, then remove them.
Layer the corn, potatoes, and onions in the kettle, sprinkling pepper, salt, and flour over each layer.
Gradually pour in the boiling water, cover the kettle, and boil for 20 minutes.
Smooth the flour in a little cold milk, add it to the remaining milk, and pour it over the chowder.
Soak the pilot biscuits in cold water until soft but not broken, then lay them over the chowder.
Bring to a boil once more, then serve.
