Ingredients

Directions

  1. Soak 1 pint of pea beans overnight after picking out poor ones.

  2. In the morning, put beans in a kettle with cold water and parboil for 10 minutes.

  3. Drain the water, add more water, onion, and mustard.

  4. When beans are nearly tender, add ½ pound of pork cut into fine lines and cook a little.

  5. In a bean pot, add salt and molasses, then add the beans and make a resting place for the pork.

  6. Cover with bean water, put the cover on, and bake for 5 to 8 hours, adding more water as needed.

  7. Remove the cover and brown for half an hour before serving.
