Excellent Chocolate Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, beat the egg whites until stiff.

  3. In another bowl, cream together the sugar and butter.

  4. Add the flour, baking powder, and vanilla to the butter mixture.

  5. Fold in the beaten egg whites gently.

  6. Take one-third of the batter and mix in the melted chocolate.

Bake

  1. Pour the chocolate batter into the center of a greased cake pan.

  2. Pour the remaining batter around the chocolate mixture.

  3. Bake in three layers until a toothpick comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Beaten until stiff, they trap air and give the cake lift and a light crumb.
Butter
Creamed with sugar, it adds fat and tenderness to the crumb.
Sugar
Creamed with butter, it sweetens the cake and helps create a tender texture.
Flour
Provides the structure that holds the cake together as it bakes.
Baking powder
Releases gas during baking, helping the cake rise.
Melted chocolate
Adds chocolate flavor and richness to one portion of the batter.

The step that matters

Folding in the beaten egg whites. Stirring vigorously deflates the whipped foam, making the cake dense. Gentle folding keeps the air bubbles that help it rise.
