What each ingredient does

Potatoes
Provide starch and moisture that give the bread a soft, tender crumb.
Yeast
Ferments the sugars and produces gas that makes the dough rise.
Brown sugar
Feeds the yeast and adds a mild sweetness and color.

The step that matters

Stir in the yeast when the mixture is lukewarm. Yeast is killed by high heat, so the mixture must be cool enough to avoid harming it, yet warm enough to keep it active and allow the dough to rise.
