Why it works: Sugar and vanilla are a kitchen classic. They rank in the top 8% of all ingredient pairs, and cooks put them together in 35,032 recipes. Both carry beta-damascenone, which smells apple, rose. The science ↓

Ingredients
Directions
The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.
Prepare
Sift the flour four times, then add cream of tartar and sift again, keeping only 1 cup after sifting.
Sift the sugar and measure it.
Beat the egg whites to a stiff froth.
Use a pan that has never been greased, preferably a brick-shaped pan with short feet.
Make the batter
Lightly add the sugar, then gently fold in the flour and vanilla.
Do not stop beating until ready to pour the mixture into the pan.
Bake and cool
Bake for 40 minutes at 350°F (175°C); check with a straw for doneness.
Do not open the oven door for at least 10 minutes after placing the cake inside.
Turn the pans upside down to cool, and once cool, loosen the sides with a knife before removing.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

The flavor team
The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Egg whites
- Whipped into a stiff foam that gives the cake its light, airy structure.
- Granulated sugar
- Sweetens the cake and stabilises the whipped egg white foam.
- Flour
- Provides the light structure that holds the cake's airy crumb once baked.
- Cream of tartar
- Acidifies the egg whites, helping them whip to a stable, stiff foam.
The step that matters
Do not stop beating until ready to pour. Egg white foam is unstable and can deflate if it sits unbeaten, losing the air that makes the cake rise. Folding gently after whipping protects that air.
Swap the vanilla
How well each one fits the dish's main ingredients (egg, sugar, flour, cream):
- Raisinfits about as well
- Vanillathe original
- Figfits less well
- Strawberryfits less well
Fit is the average pairing score against egg, sugar, flour, cream. Candidates are from the same food group and used in at least 100 recipes.
