What each ingredient does

Rennet
Enzyme that coagulates the milk proteins, turning the liquid into a set custard.
Milk
Provides the protein and fat that form the body and creamy texture of the custard.
Sugar
Adds sweetness and balances the mild, savoury taste of the set milk.

The step that matters

Checking the set without disturbing it. Rennet works by enzymatically coagulating milk proteins, and gentle handling lets the curd form a smooth, firm gel. Stirring too vigorously or moving the bowl can break the forming curd, leaving a grainy or weak set.

Swap the nutmeg

How well each one fits the dish's main ingredients (milk, sugar, vanilla, cream):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Peppermintfits less well
  4. Clovefits less well

Fit is the average pairing score against milk, sugar, vanilla, cream. Candidates are from the same food group and used in at least 100 recipes.
