Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet almonds
Provide the main almond flavor and the body of the mousse.
Bitter almonds
Add a deeper, more aromatic almond flavor in small amounts.
Fresh cream
Adds richness and fat, giving the mousse a smooth, creamy texture.
Gelatine
Sets the liquid mixture so it holds its shape when chilled.

The step that matters

Heating the cream and almond mixture until it scalds. Heating over low heat while stirring constantly keeps the cream from catching or burning on the bottom of the pan. Gelatin must then be stirred in while the mixture is hot but not boiling, so it dissolves evenly and sets smoothly.

Flavor stand-ins for the orange

How well each one fits the dish's main ingredients (almond, cream):

  1. Vanillabetter flavor fit
  2. Coconutbetter flavor fit
  3. Avocadobetter flavor fit
  4. Orangethe original

Fit is the average pairing score against almond, cream. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
