The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Gelatin-like setting agent that firms the milk mixture as it cools.
Rich milk or cream
Provides the body, richness and creamy texture of the dessert.
Sweet almonds
Supply the characteristic almond flavour and some body to the set dessert.

The step that matters

Dissolving the isinglass completely. Isinglass must fully dissolve in the hot milk mixture; if undissolved particles remain, the dessert will set unevenly and feel gritty or lumpy. Straining afterward removes any residue.

Flavor stand-ins for the almond

How well each one fits the dish's main ingredients (milk, sugar):

  1. Cocoaabout as good a flavor fit
  2. Almondthe original
  3. Chestnutabout as good a flavor fit

Fit is the average pairing score against milk, sugar. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
