Ingredients

Directions

Prepare

  1. Trim all fat from the meat and place it in a stew pan.

  2. Fry gently for 10-15 minutes.

  3. Cut the meat into small pieces, season with salt and pepper, and sprinkle with 2 tablespoons of flour.

  4. Chop the vegetables into very small pieces and add them to the pan with the fat.

  5. Fry for 5 minutes, stirring constantly.

  6. Add the meat to the pan and stir until it begins to brown.

Simmer

  1. Pour in the quart of boiling water.

  2. Cover and let it boil once, skim off any foam, then reduce heat to a simmer for 2.5 hours.

Finish and thicken

  1. After 2.5 hours, add the sliced potatoes and 1 tablespoon of flour mixed with ½ cup cold water until smooth.

  2. Taste the stew and adjust seasoning with more salt and pepper if needed.

  3. Bring the stew to a boil again and cook for 10 minutes before adding dumplings.

  4. Cover tightly and boil rapidly for another 10 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Provides the main body and chewy, savory meat flavor; slow simmering makes it tender.
Flour
Dusted on the meat and later stirred into water, it thickens the stew's cooking liquid.
Potatoes
Soften during cooking and add starch that helps body the stew.

The step that matters

Adding the flour and water mixture. Flour must be mixed smoothly with cold water before it goes into the hot liquid. Added dry or lumpy, it clumps and thickens unevenly, while starch stirred into cold water disperses and thickens smoothly as it heats.

Swap the onion

How well each one fits the dish's main ingredients (beef, carrot, turnip, potato, flour, pepper):

  1. Parsnipfits better
  2. Leekfits better
  3. Okrafits better
