Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Veal Cutlets

Ingredients

Directions

  1. Cut veal from the leg into equal-sized cutlets and press into shape with a knife or cutlet bat.

  2. Fry thin slices of ham in their own fat until crispy, then remove from the pan.

  3. Dip the cutlets in egg and coat with bread crumbs, then fry in the same fat until golden.

  4. Make gravy by adding flour to some of the fat, then gradually stir in hot water until smooth.

  5. Season the gravy with salt, pepper, and lemon juice.

  6. Serve the cutlets alternating with ham slices, garnished with lemon slices and the gravy.
