Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓
How to Deess Sweet-breads
Ingredients
Directions
The book says “a brisk oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
If desired, lard the sweetbreads with strips of fresh bacon.
Boil the sweetbreads until nearly done.
Place them in a thickly buttered deep dish, covering the bottom with carrot and onion slices.
Add a ladleful of broth, season with salt and pepper, and brown in a 400°F (200°C) oven until dark golden.
Remove the sweetbreads, strain the juice, and mix in veal stock and a few drops of lemon juice before serving.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
