Why it works: Parsley and lemon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓
Oysters in the Shell
Ingredients
Directions
The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Open the oyster shells and keep the deepest ones.
Melt some butter and season it with minced parsley and pepper.
When slightly cool, roll each oyster in the butter mixture, ensuring minimal drips.
Lay the oysters back in their shells.
Add a little lemon juice to each shell.
Cover with grated bread crumbs.
Place in a baking pan and bake at 400°F (200°C).
Just before they are done, add a little coarse sea salt.
Serve in the shells.
