To Stew Tomatoes

Ingredients

Directions

  1. If using fresh tomatoes, blanch them in boiling water to remove the skins.

  2. Cut away the hard pith and slice the tomatoes finely.

  3. Place the sliced tomatoes in a saucepan and stew gently for 30 minutes.

  4. Season with salt, pepper, and butter.

  5. If desired, thicken with a few fine bread or cracker crumbs.

  6. If using canned tomatoes, stew for only 15 minutes after opening.

  7. Examine the canned tomatoes for any hard, green pieces, then cut them into fine pieces.

  8. Stir and mash the canned tomatoes until they form a fine pulp, then season and serve hot.
