Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 300°F (150°C).

  2. Grease a baking dish or bright tin pan.

  3. Layer bread crumbs in the bottom of the dish.

  4. Add a layer of tomatoes, then sprinkle with salt, pepper, and small lumps of butter.

  5. Add a few small pieces of raw onion for flavor.

  6. Repeat layering with bread crumbs and tomatoes, seasoning each layer as before.

  7. Finish with a top layer of bread crumbs and dot with butter.

  8. Cover the dish and bake for 1.5 hours if using fresh tomatoes, or 1 hour for canned.

  9. Remove the cover for the last 30 minutes to allow the top to brown.
