Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Butter a heatproof dish.

  2. Line the sides with shavings of good cheese.

Assemble

  1. Drop 5 or 6 raw eggs into the dish.

  2. Pour 3 tablespoons of cream over the eggs.

  3. Season with salt, cayenne, and a small grate of nutmeg.

  4. Sprinkle grated cheese on top and add 2 more tablespoons of cream.

Bake

  1. Bake in a 400°F (200°C) oven for about 7 minutes or until the eggs are set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set into a custard-like texture that holds the dish together as they cook.
Cream
Adds moisture and richness, keeping the eggs soft and silky as they bake.
Cheese
Adds savory flavor and, as it melts and browns on top, a golden crust.

The step that matters

Baking until the eggs are just set. Egg proteins firm as they heat, so pulling the dish once the whites and yolks are set keeps the texture tender. Overbaking makes the eggs tight, dry and rubbery.

Swap the nutmeg

How well each one fits the dish's main ingredients (butter, cheese, egg, cream, pepper):

  1. Nutmegthe original
  2. Parsleyfits about as well
  3. Tarragonfits less well
  4. Thymefits less well

Fit is the average pairing score against butter, cheese, egg, cream, pepper. Candidates are from the same food group and used in at least 100 recipes.
