Why it works: Lemon and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Grind the veal, pork, and onion together using a meat grinder.

  2. Mix in the bread crumbs and season with salt and pepper.

  3. Beat the eggs and add them to the mixture.

Shape and bake

  1. Shape the mixture into a loaf and place it in a baking dish.

  2. Squeeze lemon juice over the loaf to enhance flavor.

  3. Bake in a 350°F (175°C) oven for one hour or until cooked through, basting occasionally.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides the main meaty structure and body of the loaf.
Fat pork
Adds fat that keeps the loaf moist and tender as it cooks.
Fine bread crumbs
Absorb juices and help the loaf hold its shape while keeping it tender.
Eggs
Bind the mixture and help it set firmly when baked.

The step that matters

Baking until cooked through. Ground meat loaves must reach a safe internal temperature throughout. Basting helps keep the surface moist, but doneness should be checked in the thickest part rather than judged by time alone.

Swap the onion

How well each one fits the dish's main ingredients (veal, pork, bread, egg, lemon, pepper):

  1. Capsicumfits better
  2. Asparagusfits better
  3. Spinachfits better
  4. Onionthe original
