Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main flavor and tender texture once briefly boiled and cooled.
Mayonnaise
Adds fat and creaminess, coating the oysters and binding the salad together.
Cabbage lettuce
Forms a crisp, cool base that holds the oysters and adds gentle crunch.

The step that matters

Boil the oysters for 5 minutes. Boiling only until the oysters are just firm keeps them tender; overcooking toughens the proteins and makes them rubbery and shrunken.

Swap the cabbage

How well each one fits the dish's main ingredients (oyster, vinegar, lettuce, crab, egg):

  1. Cucumberfits better
  2. Mustardfits better
  3. Horseradishfits better
  4. Cabbagethe original

Fit is the average pairing score against oyster, vinegar, lettuce, crab, egg. Candidates are from the same food group and used in at least 100 recipes.
