Ingredients
Directions
The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Prepare
Preheat the oven to 400°F (200°C).
Sift the flour and cream of tartar together four or five times.
Line a funnel cake pan with ungreased paper.
Make the batter
Beat the egg whites until very stiff.
Gradually add the sugar while beating thoroughly.
Flavor with vanilla extract.
Quickly and lightly fold in the flour mixture.
Bake and serve
Pour the mixture into the pan and bake for 50 minutes.
Loosen the edges and remove the cake from the pan immediately.
Slice and serve with custard sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Egg whites
- Whipped into a stiff foam that gives the cake its light, airy structure.
- Sugar
- Sweetens the cake and helps stabilize the whipped egg white foam.
- Flour
- Provides the light framework that sets the cake's crumb once baked.
- Cream of tartar
- Acidifies the egg whites, strengthening the foam so it holds its volume.
The step that matters
Quickly and lightly fold in the flour mixture. Overmixing knocks air out of the whipped egg white foam, so the cake bakes up dense instead of light and tall. Folding gently keeps the bubbles intact.
Swap the vanilla
How well each one fits the dish's main ingredients (flour, cream, egg, sugar):
- Raisinfits about as well
- Vanillathe original
- Figfits less well
- Strawberryfits less well
Fit is the average pairing score against flour, cream, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
