Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet almonds
Provide the main almond flavour and body of the pudding.
Isinglass
Sets the liquid so the pudding holds its shape when chilled.
Milk
Forms the creamy base that carries the flavour and softness.
Loaf sugar
Adds sweetness and helps balance the almond flavour.
Cream
Adds fat for a richer, smoother texture.

The step that matters

Add the soaked isinglass. Isinglass is a gelatine-like setting agent. It must be fully softened and dissolved into the hot mixture, then strained, so the pudding sets evenly without lumps or grainy patches.

Flavor stand-ins for the almond

How well each one fits the dish's main ingredients (milk, sugar, vanilla, cream):

  1. Almondthe original
  2. Chestnutabout as good a flavor fit
  3. Hazelnutabout as good a flavor fit

Fit is the average pairing score against milk, sugar, vanilla, cream. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
