Ingredients

Directions

  1. Trim the meat from the bones, remove the skin, and cut the chicken into small pieces.

  2. In a pan, add a little water to moisten the chicken, then season with salt and white pepper.

  3. Cook until the water evaporates, then arrange the chicken on rice toast.

  4. Prepare the rice the night before by boiling it, then pressing it into a dish and refrigerating it with a weight.

  5. The next morning, cut the rice into half-inch slices, brush with butter, and toast until golden brown.

  6. Pour melted butter over the toasted rice, season with salt and pepper, and add orange juice.

  7. If desired, top with a poached egg.
