The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Thickens the sauce as its starch swells and sets during simmering.
Cream
Adds richness and a smooth, velvety body to the sauce.
Butter
Adds fat for richness and a silky mouthfeel in the finished sauce.
Crab meat
Provides the main flavor and tender, flaky texture of the filling.

The step that matters

Simmer until the sauce coats the spoon. Flour starch thickens only as it heats and swells. Stopping too early leaves the sauce thin and watery, while overcooking can make it gluey and dense. Coating the spoon signals the right body for binding the crab filling.

Swap the white pepper

How well each one fits the dish's main ingredients (flour, cream, butter, crab, meat):

  1. Nutmegfits better
  2. Capersfits better
  3. Garlicfits better
  4. White pepperthe original

Fit is the average pairing score against flour, cream, butter, crab, meat. Candidates are from the same food group and used in at least 100 recipes.
