Salmon Patties

Ingredients

Directions

  1. Open the can of salmon and drain it.

  2. Add enough water to the salmon liquid to make ½ cup.

  3. Season with salt, pepper, and anchovy paste if using.

  4. Beat the yolks of the eggs with ½ teaspoon of flour dissolved in a little cold water or milk.

  5. Add the ½ cup of water and heat the mixture on the stove, whisking until thick.

  6. Break the salmon into pieces and add it to the sauce.

  7. Fill patty shells with the hot salmon mixture and serve.

  8. To make the patty shells, roll out puff pastry to ½ inch thick.

  9. Cut rounds with a 3-inch cutter and press a smaller cutter in the center to create a shallow indentation.

  10. Place the rounds on a buttered baking sheet and brush with beaten egg.
