What each ingredient does

Tapioca
Its starch thickens with heat and sets into a soft, translucent, pudding-like texture as it cools.
Pineapple
Adds fruity acidity and moisture, and its flavor brightens the sweetened tapioca.
Sugar
Adds sweetness and helps balance the tart pineapple flavor.

The step that matters

Cooking the tapioca until transparent. Tapioca starch must be fully gelatinized by sustained heat before the mixture is sweetened and molded. Undercooked pearls stay opaque and chalky, and the pudding will not set evenly.

Swap the pineapple

How well each one fits the dish's main ingredients (sugar, cream):

  1. Vanillafits better
  2. Strawberryfits better
  3. Raspberryfits better
  4. Pineapplethe original

Fit is the average pairing score against sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
