Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Cream together the butter and sugar until light and fluffy.

  3. Add the sweet milk and mix well.

  4. In a separate bowl, beat the egg whites until stiff peaks form.

  5. Sift together the flour and baking powder, then gradually add to the butter mixture.

  6. Fold in the beaten egg whites gently.

  7. Pour the batter into jelly-cake pans and bake until golden.

  8. For the icing, boil the powdered sugar with boiling water until it forms a thick syrup.

  9. Remove from heat and stir in vanilla and beaten egg whites until cool.

  10. Spread the icing between the layers and on top.
