Ingredients

Directions

Prepare the fish

  1. Salt the fish and place it in a cold area until ready to cook.

  2. Boil enough water in a kettle to cover the fish, or wrap the fish in a cloth and boil in any cooking vessel.

  3. Add 1 teaspoon of salt and 1 tablespoon of vinegar for every pound of fish.

Cook and make the sauce

  1. Cook the fish for about 30 minutes.

  2. Be careful not to break the fish when removing it.

  3. For the sauce, stir a piece of butter mixed with flour into 1 pint of boiling milk.

  4. Chop the hard‑boiled egg finely and add it to the sauce.

Serve

  1. Pour the sauce over the fish or serve it in a sauceboat.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the liquid base of the sauce, giving it body and a smooth, creamy texture.
Butter mixed with flour
Flour thickens the milk into a sauce, while butter adds richness and smooth mouthfeel.
Hard-boiled egg
Finely chopped, it adds texture and richness to the sauce.

The step that matters

Keep the fish whole when removing it. Cooked fish is delicate and its flesh flakes apart easily, so lifting it gently with support helps it hold together. Simmering below a hard boil also helps prevent breakage.
