What each ingredient does

Oysters
Provide the main flavour and tender texture of the soup.
Milk
Adds creaminess and body to the broth.
Crackers
Crushed crackers thicken the liquid slightly and add body.
Butter
Adds richness and a silky mouthfeel to the broth.

The step that matters

Adding the oysters at the end. Oysters toughen and shrink when overcooked, so they are added just before serving and boiled only briefly.
