Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat your oven to 350°F (175°C).

  2. Sprinkle the roast with coarse sea salt and black pepper, then dredge it lightly with flour.

  3. Place the roast in a pan and add a little water for basting.

  4. Roast for 15 minutes per pound for rare meat, longer for well done.

  5. Once cooked, transfer the meat to a hot platter.

  6. Pour off the fat from the pan and thicken the gravy with flour mixed with a little water.

  7. Season the gravy with salt and pepper if needed.
