Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

  1. In a large bowl, mix the flour, eggs, butter, lard, sugar, currants, and yeast.

  2. Add enough warm milk to create a soft dough; water can be used if milk is unavailable.

  3. Set the mixture aside to rise overnight.

  4. In the morning, roll out the dough into thin cakes and let them rise again.

  5. Before baking, mix sugar and cinnamon together.

  6. Pour hot melted butter over the cakes and sprinkle with the sugar mixture.

  7. Bake in a slow oven at 300°F (150°C) until golden.
