Lobster Bisque

Ingredients

Directions

Prepare the lobster base

  1. Pound the coral and soft parts of the lobster into a paste and simmer in boiling water for 5 minutes.

  2. Rub the mixture through a colander back into the water.

Make the bisque

  1. Cut the remaining lobster meat into dice and place in a saucepan with the cracker crumbs.

  2. Pour the red water over the lobster and cracker mixture, then bring to a boil.

  3. Add cayenne pepper, salt, and butter, then simmer covered for 30 minutes, ensuring it does not scorch.

  4. In another vessel, heat the milk with a pinch of baking soda.

  5. After the lobster mixture is in the tureen, pour in the hot milk.

  6. Serve with sliced lemon.

What each ingredient does

Lobster
Provides the main meaty texture and the sweet, savory flavor of the bisque.
Milk
Adds creaminess and a mild sweetness that softens the bisque's body.
Rolled crackers
Crumbs thicken the liquid and give the bisque body.
Butter
Adds richness and fat that carries flavor and smooths the texture.
Baking soda
Raises the pH of the milk, helping it stay smooth when heated.

The step that matters

Simmer covered without scorching. Cracker crumbs and milk-rich mixtures settle and stick to the pan bottom easily, so gentle, covered simmering with occasional stirring prevents scorching and keeps the texture even.
