Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Shredded codfish
Provides the main body and savory flavor of the balls.
Mashed potatoes
Adds starch and moisture that help the mixture bind and stay tender.
Egg
Binds the mixture so the balls hold their shape.
Flour
Forms a dry coating that browns during frying and helps the exterior crisp.

The step that matters

Let the mixture cool completely and stiffen the balls before frying. A warm, soft mixture is sticky and tends to break apart in hot oil. Cooling and chilling firm the starches and egg so the balls hold their shape while frying.

Swap the potato

How well each one fits the dish's main ingredients (vinegar, egg, pepper, flour):

  1. Capsicumfits better
  2. Shallotfits better
  3. Mustardfits better
  4. Potatothe original

Fit is the average pairing score against vinegar, egg, pepper, flour. Candidates are from the same food group and used in at least 100 recipes.
