Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Preheat the oven to 400°F (200°C).

  2. Heat the butter in a pan and stir in the flour and mustard to make a roux.

  3. Heat the milk until scalding hot, then mix it with the roux.

  4. Cook the mixture for three minutes, then transfer it to a bowl.

  5. Add the crab meat, salt, cayenne, and lemon juice to the bowl and mix well.

Fill and bake

  1. Fill shells or pate pans with the mixture, top with breadcrumbs and bits of butter.

  2. Bake in the preheated oven until golden brown.

What each ingredient does

Crab meat
Forms the main body of the filling and gives the dish its seafood flavor.
Butter
Enriches the roux and the topping, adding richness and helping the crumbs brown.
Flour
Thickens the milk into a smooth sauce that holds the crab together.
Milk
Forms the liquid base of the sauce, adding creaminess and body.
Breadcrumbs
Form a crisp, golden topping that browns in the oven.
Mustard
Adds a sharp, tangy note that balances the richness of the sauce.

The step that matters

Cooking the roux and sauce. Flour must cook in the butter long enough to lose its raw taste and then be thinned gradually with hot milk so it thickens smoothly without lumps. Cooking the sauce for the full three minutes lets the starch swell fully and thicken the mixture.
