Pressed Corned Beef

Ingredients

Directions

Prepare the beef

  1. Tie the beef tightly in a piece of pre‑shrunk cotton cloth to shape it.

  2. Place the beef in a pot and cover it with cold water.

  3. Add celery, carrot, turnip, onion, and cabbage leaves to the pot.

Cook

  1. Simmer gently for 4 to 5 hours, ensuring only a quiet bubbling.

  2. Once cooked, leave the beef in the water until nearly cold.

Press and finish

  1. Remove the beef, lay it between two flat surfaces, and place heavy weights on top.

  2. Let it sit overnight.

  3. In the morning, remove the cloth and trim any ragged edges.

  4. Garnish with watercress, parsley, or small pickles.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef brisket or plate-piece
Provides the main meat, which becomes firm and sliceable after slow simmering and pressing.
Celery
Adds a mild aromatic flavour to the cooking liquid.
Onion
Adds aromatic sweetness and depth to the cooking liquid.

The step that matters

Simmer gently for 4 to 5 hours. A quiet bubble keeps the meat tender without toughening its proteins. A hard boil tightens muscle fibres and can break the meat apart, so the simmer should stay gentle.

Swap the cabbage

How well each one fits the dish's main ingredients (beef, celery, carrot, turnip, onion):

  1. Leekfits better
  2. Parsnipfits better
  3. Okrafits better
  4. Cabbagethe original

Fit is the average pairing score against beef, celery, carrot, turnip, onion. Candidates are from the same food group and used in at least 100 recipes.
