Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Knuckle of veal
Provides the main meat, and its bones and connective tissue enrich the braising liquid as they cook slowly.
Corned ham
Adds salty, savory flavor to the braising liquid as it cooks with the meat.
Flour
Thickens the strained gravy so it coats the meat rather than running off.
Onion
Contributes aromatic sweetness and depth to the braising liquid.

The step that matters

Thickening the gravy. Flour must be fully mixed into the hot strained liquid and boiled, since boiling gelatinizes the starch; otherwise the gravy stays thin or tastes raw and floury.

Swap the tomato

How well each one fits the dish's main ingredients (veal, ham, carrot, onion, parsley, pepper, flour):

  1. Turnipfits better
  2. Parsnipfits better
  3. Leekfits better
  4. Tomatothe original

Fit is the average pairing score against veal, ham, carrot, onion, parsley, pepper, flour. Candidates are from the same food group and used in at least 100 recipes.
