Scallop of Veal and Mushrooms

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare and layer

  1. Preheat the oven to 350°F (175°C).

  2. In a greased baking dish, layer chopped veal and stuffing.

  3. Season with coarse sea salt and wet with cold gravy.

  4. Add a layer of chopped mushrooms, then cover with bread crumbs and scatter butter on top.

  5. Repeat layers of meat, seasoning, mushrooms, and crumbs, finishing with plenty of buttered crumbs on top.

Bake and serve

  1. Cover the dish and bake until it bubbles on top.

  2. Remove the cover and brown lightly before serving in the baking dish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chopped veal
Provides the main cooked meat that forms the body of the casserole.
Stuffing
Adds bulk and savory flavor between the meat layers.
Cold gravy
Adds moisture so the layers stay juicy as they bake.
Chopped mushrooms
Contribute earthy flavor and moisture to the layers.
Bread crumbs
Form a crisp, golden topping that browns in the oven.
Butter
Adds fat that helps the crumbs brown and enriches the dish.

The step that matters

Covering, then browning the top. Baking covered traps steam so the layers heat through and the crumbs soften slightly, then uncovering lets dry heat brown the crumbs. Leaving the cover on too long gives a pale, soft top, while skipping the browning leaves the crumbs bland and unappealing.
