Calf's Liver a LA Mode

Ingredients

Directions

Prepare the liver

  1. Wash the liver and soak it in cold, salted water for 30 minutes.

  2. Wipe the liver dry and lard it with the salt pork, allowing it to lie on both sides.

Braise

  1. Heat the dripping, onions, herbs, and spices in a frying pan.

  2. Add the liver and fry both sides until light brown.

  3. Transfer everything to a saucepan, add vinegar and enough water to cover the liver.

  4. Cover with a lid and stew gently for 1.5 hours.

Make the sauce and serve

  1. Place the liver on a hot dish, strain the sauce into the gravy, and thicken with browned flour.

  2. Bring the sauce to a boil, pour half over the liver, and serve the rest in a sauceboat.

What each ingredient does

Calf liver
Is the main meat, becoming tender during slow, covered stewing.
Salt pork
Adds fat and savoury flavour as it melts into the liver during frying.
Onions
Soften and sweeten as they cook, building the base flavour of the sauce.
Vinegar
Adds acidity that brightens the rich liver and sauce.
Browned flour (in the method)
Thickens the strained sauce, giving it body and a deeper colour.

The step that matters

Stewing gently with a lid. Liver turns tough and grainy if it simmers hard or cooks too long, so low, covered heat keeps the proteins tender and the sauce from reducing too fast.

Swap the onion

How well each one fits the dish's main ingredients (liver, pork, sauce, vinegar, pepper):

  1. Capsicumfits better
  2. Mustardfits better
  3. Tomatofits about as well
  4. Onionthe original

Fit is the average pairing score against liver, pork, sauce, vinegar, pepper. Candidates are from the same food group and used in at least 100 recipes.
