Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lean pork
Provides the meat that becomes tender during slow stewing.
Potatoes
Thickens the gravy slightly as they break down during cooking.
Flour
Thickens the gravy as it cooks with the liquid.
Butter
Adds richness and body to the gravy when stirred in.
Biscuit dough
Cooks in the boiling gravy to become soft, dumpling-like strips.

The step that matters

Keep the gravy at a boil when adding the biscuit dough. Dropping the dough into gently boiling gravy and cooking it for the full time helps the strips set and cook through instead of turning gummy or soggy.
