Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

  11. Season with pepper and salt.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Forms the main body of the dish, providing the meat that is roasted and carved.
Flour
Dredged on the skin and browned to thicken the pan gravy.
Butter
Basting fat that adds richness and helps the skin brown.
Bacon or pork fat
Lies under the chicken, adding fat and flavour to the pan juices and gravy.
Bread-crumbs
Moistened with butter to form the body of the stuffing, giving soft texture.

The step that matters

Cook for 15 minutes per pound. Roasting time depends on weight, and a chicken cooked too briefly may stay underdone near the bone, while overcooking dries the meat.

Swap the parsley

How well each one fits the dish's main ingredients (chicken, meat, pork, butter, pepper, flour, bread):

  1. Thymefits better
  2. Garlicfits about as well
  3. Marjoramfits about as well
  4. Parsleythe original

Fit is the average pairing score against chicken, meat, pork, butter, pepper, flour, bread. Candidates are from the same food group and used in at least 100 recipes.
