Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creates flaky layers in the pastry as it melts and steams during baking.
Flour
Forms the structure of the pastry dough once mixed with water.
Chicken
Provides the main protein, which becomes tender through slow stewing.
Onion
Adds aromatic flavour to the gravy as it simmers.

The step that matters

Chopping the chilled butter into the flour. Butter must stay cold so it forms small pieces in the flour; as it melts in the oven it leaves steam pockets that make the pastry flaky rather than dense.

Swap the onion

How well each one fits the dish's main ingredients (chicken, celery, parsley, pepper, flour, butter):

  1. Carrotfits better
  2. Leekfits better
  3. Potatofits better
  4. Onionthe original

Fit is the average pairing score against chicken, celery, parsley, pepper, flour, butter. Candidates are from the same food group and used in at least 100 recipes.
