Ingredients

Directions

Prepare

  1. Joint the chicken as for fricassee and place it in a pot with enough cold water to cover it.

Cook

  1. Bring the water to a boil slowly and cook the chicken until tender, about 2 to 3 hours for older chickens.

  2. After 1 hour of simmering, add the sliced onion, chopped celery, parsley, and paprika.

Finish and serve

  1. Once the chicken is done, arrange it on a serving dish.

  2. Add salt to the gravy to taste and stir in the lemon juice, then pour it over the chicken.

What each ingredient does

Paprika
Adds a warm, sweet red colour and mild earthy flavour to the broth and gravy.
Lemon juice
Adds acidity that brightens the flavour of the rich gravy.
Onion
Adds aromatic sweetness and depth to the simmering liquid.
Celery
Adds savoury, vegetal aroma that builds flavour in the broth.

The step that matters

Bring the water to a boil slowly. Starting in cold water and heating gently lets the chicken release flavour into the liquid and keeps the meat tender. A rapid boil toughens the proteins and makes the broth cloudy.
