What each ingredient does

Ducks
Provide the main meat, which becomes tender through slow stewing.
Flour
Coats the duck so it browns in the fat and helps thicken the juices.
Stock or consommé
Forms the moist liquid in which the duck stews and softens.
Brown roux
Flour and fat cooked together to thicken the stewing liquid into a sauce.
Tomato ketchup
Adds sweetness and acidity to the sauce, deepening its colour and flavour.
Sherry
Adds aroma and a rounded, slightly sweet flavour to the finished sauce.

The step that matters

Stew slowly until tender. Gentle, covered simmering lets connective tissue in the duck break down slowly. Boiling hard toughens the meat and can make the sauce cloudy or uneven.

Swap the onion

How well each one fits the dish's main ingredients (pepper, flour, tomato, ketchup, lemon, sherry):

  1. Capsicumfits better
  2. Shallotfits better
  3. Arrowrootfits better
  4. Onionthe original

Fit is the average pairing score against pepper, flour, tomato, ketchup, lemon, sherry. Candidates are from the same food group and used in at least 100 recipes.
