Deviled Eggs

Ingredients

Directions

Prepare the eggs

  1. Place the boiled eggs in cold water immediately after cooking to make peeling easier.

  2. Carefully cut the eggs in half, keeping the whites intact.

  3. Mash the yolks with melted butter, mustard, salt, and pepper until smooth.

  4. Form the yolk mixture into balls the size of the yolks and place them back into the egg whites.

  5. Secure the halves together with string or toothpicks.

Coat and fry

  1. Roll the stuffed eggs in beaten egg, then in bread crumbs.

  2. Fry in boiling Cottolene until golden brown.

  3. Remove the strings or toothpicks before serving.

What each ingredient does

Eggs
The whites hold the yolk filling, and the yolks provide the rich, creamy filling.
Melted butter
Adds fat and moisture so the mashed yolk filling stays smooth and rich.
Dry mustard
Adds a sharp, tangy flavour that balances the richness of the yolks.
Bread crumbs
Form a crisp, golden crust during frying.

The step that matters

Fry in boiling Cottolene until golden brown. The egg coating must be fully set and sealed before it reaches the hot fat, or the crumbs can absorb oil and break apart. Frying in very hot fat quickly sets the beaten egg and browns the crumbs into a crisp shell while the filling stays warm inside.
