Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cucumbers
Provide the main vegetable body, becoming tender and mild when simmered in water.
Butter
Adds richness and a smooth, rounded flavor to the cucumbers and the sauce.
Flour
Thickens the cream into a smooth sauce when cooked with butter as a roux.
Cream
Forms the body of the sauce, giving it a rich, creamy texture.

The step that matters

Adding the cream to the roux. Adding hot cream gradually to the butter and flour roux, while stirring, keeps the mixture smooth. Dumping it in at once can trap flour lumps that do not fully dissolve, leaving a grainy sauce.
