Custard Rice Pudding

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the rice

  1. Soak the rice in the milk for 1 hour.

  2. Place the saucepan with rice in a larger pot of boiling water and cook until the rice is soft.

  3. Spread the cooked rice on a platter to cool.

Make the custard

  1. Beat the yolks of the eggs, then mix in the creamed butter and sugar, cooled rice, and cold milk.

  2. Fold in the stiffly beaten egg whites.

  3. If desired, add chopped raisins before baking.

Bake and serve

  1. Transfer the mixture to a buttered pudding dish and bake covered for 30 minutes, then uncovered for 15 minutes at 400°F (200°C).

  2. Sprinkle nutmeg or mace on top before serving warm with hot sauce or cold with cream.

What each ingredient does

Eggs
Yolks enrich and set the custard, while whipped whites lighten the texture and help it rise.
Rice
Provides the body of the pudding, absorbing liquid and giving it a soft, starchy bite.
Milk
Forms the liquid base that cooks with the eggs and rice into a creamy custard.
Sugar
Sweetens the pudding and adds to its tender, browned top during baking.
Butter
Adds richness and a smooth, tender mouthfeel to the custard.

The step that matters

Fold in the stiffly beaten egg whites. Whites hold air only when whipped stiff and folded gently; overmixing deflates them, leaving a denser pudding with less lift.

Swap the raisin

The recipe marks raisin as optional. How well each one fits the dish's main ingredients (rice, milk, egg, sugar, butter, nutmeg):

  1. Vanillafits better
  2. Coconutfits better
  3. Figfits about as well
  4. Raisinthe original

Fit is the average pairing score against rice, milk, egg, sugar, butter, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
