Pineapple Pudding

Oven, in the book's wordsA good oven

Ingredients

Directions

The book says “a good oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Butter a pudding dish.

  2. Place slices of stale sponge cake in the bottom and wet them with a little sherry wine.

  3. Cover the cake with freshly chopped pineapple.

  4. Sprinkle powdered sugar over the pineapple.

  5. Add more cake, wine, and pineapple until the dish is full, ensuring the top layer is cake and well soaked.

  6. Cover the dish closely and bake for one hour at 400°F (200°C).

  7. Serve hot with lemon sauce.
