What each ingredient does

Butter
Adds richness and a smooth, creamy body to the sauce.
Powdered sugar
Adds sweetness and dissolves easily into the butter for a smooth texture.
Liquor from brandied peaches
Supplies the main liquid, sweetness and the fruity, boozy flavour of the sauce.
Arrowroot
Thickens the sauce as it heats, giving it a glossy, smooth consistency.

The step that matters

Adding the arrowroot mixture. Arrowroot must be mixed with cold water before it goes into the warm liquid, or it will form lumps. It thickens as the sauce heats, so stirring well while it comes to scalding hot gives an even, smooth result.
