Ingredients

Directions

The book says “a steady oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Stir the butter, powdered sugar, and mace or nutmeg into the hot apple sauce.

  2. Let the mixture cool.

  3. Add the beaten yolks of the eggs.

  4. Beat the mixture for two minutes until well combined.

  5. Gently fold in the stiffly beaten egg whites.

  6. Gently fold in the baking soda dissolved in cream.

Bake and serve

  1. Pour the mixture into a buttered and heated baking dish.

  2. Bake in a 350°F (175°C) oven until puffy and lightly browned.

  3. Serve immediately.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whites are beaten and folded in to give the omelet its light, airy structure, and yolks enrich it.
Apple sauce
Provides moisture and the main apple flavor, forming the base of the batter.
Powdered sugar
Adds sweetness and dissolves easily into the warm apple sauce.
Baking soda
Reacts with the acidic apple sauce to help the omelet rise and brown.
Butter
Adds richness and flavor, and helps the baking dish release and brown the edges.

The step that matters

Gently fold in the stiffly beaten egg whites. Egg whites hold air only when beaten to stiff peaks, and vigorous stirring knocks that air out. Folding gently keeps the batter light so the omelet puffs in the oven.

Swap the mace

How well each one fits the dish's main ingredients (apple, sauce, butter, sugar, egg, cream):

  1. Nutmegfits better
  2. Cinnamonfits better
  3. Tarragonfits better
  4. Macethe original

Fit is the average pairing score against apple, sauce, butter, sugar, egg, cream. Candidates are from the same food group and used in at least 100 recipes.
