What each ingredient does

Tapioca
Starch that swells and thickens the milk as it cooks, giving the pudding its body.
Milk
Provides the liquid base and creamy richness of the pudding.
Sugar
Adds sweetness and helps balance the mild flavor of the milk.
Vanilla
Adds aroma and a rounded flavor to the finished pudding.

The step that matters

Stirring constantly while the tapioca cooks. Tapioca starch settles and scorches on the bottom of the pan if left alone. Constant stirring keeps heat even, so the starch swells evenly and the pudding thickens without sticking or burning.
