What each ingredient does

Strawberries
Provide the main flavour and juice that gives the ice cream its fruit character.
Sugar
Sweetens the mixture and draws juice out of the strawberries, softening the fruit.
Egg whites
Whipped-in air and proteins add lightness and help the frozen texture stay airy.

The step that matters

Freeze the mixture until it is half-congealed. Freezing only partly before adding the egg whites keeps the mixture slushy enough to blend evenly. If it freezes fully first, the whites cannot be mixed in smoothly and the texture turns icy and dense.
