What each ingredient does
- Ground coffee
- Provides the main flavour and aroma as the boiling water extracts it.
- Boiling water
- Extracts the soluble flavour compounds from the grounds and carries them through the filter.
The step that matters
Keeping the water actively boiling. Water must be at a full boil when poured over the grounds. Cooler water extracts coffee more weakly and produces a flatter, less aromatic brew.
